Thanksgiving Dinner

Thanksgiving is just around the corner, which means families are starting to discuss the meal menu.  We are looking forward to many delicious dishes on our plates this long weekend, including Mac N’ Cheese, Cinnamon Rolls, Apple Pie and Pumpkin Soup and many more.

Whether you’re looking for classic Thanksgiving recipes or something totally new, you’re sure to love one or more of these dishes.

Roasted Garlic Mashed Potatoes

These mashed potatoes are creamy, deeply flavourful and delicious.

Roasted Garlic Mashed Potatoes

Ingredients:

  • Potatoes – Yukon gold or German butterball potatoes.  They have a rich golden colour, and they make for super creamy mashed potatoes.
  • Roasted garlic – Mix in a whole head of roasted garlic to pack the with flavour.
  • Olive Oil 
  • Salt and pepper 
  • Toppings –  Sprinkle of chives, minced fresh rosemary, and a pat of butter.

Instructions:

First, roast the garlic in a 350-degree oven until the cloves are deeply brown and tender. This could take up to 60 minutes! Tip: You can easily do this step ahead of time. Wrapped in foil, the roasted garlic will keep for 3 days in the fridge.

Then, peel the potatoes. If you love creamy mashed potatoes, peeling is a must. Once they’re peeled, there’s no need to cut the potatoes before cooking. Just put them in a large pot, and cover them with 1 inch of cold water.

Next, boil them. Add a teaspoon of salt to the pot, and boil until the potatoes are tender. Before you drain the potatoes, don’t forget to reserve 1 cup of the starchy cooking water.

 

Cheese Soup with Chicken

Fall soups are excellent comfort foods especially when they are as cheesy and creamy as this soup.

Ingredients

  • Bay leaf – 3.00 pcs
  • Fennel
  • Black pepper
  • salt
  • Butter
  • 180 grams of carrot
  • 150 grams of onion
  • 400 grams of potatoes
  • 200 grams of cream cheese
  • 500 grams of chicken fillet

 

Instructions

Put the meat in a pot, fill it with water, and light the fire. Add a teaspoon of salt and two or three bay leaves once it begins to boil. After 20 more minutes of boiling, remove the fillet and let it cool. Put the broth back on fire.

Potatoes should be peeled and cubed. Grate the carrot and chop the onion. Cut meat into small pieces.

In the broth, add the potatoes and simmer for 5-7 minutes.

Saute onion in butter, then add carrot.  Add salt and pepper to taste at the end. Then, boil the soup for an additional 5-7 minutes after adding this mixture.

To the soup, add the chopped meat, and cook for 3–4 minutes. Finally, stir in the cream cheese, mix well and remove from heat. 

Upon serving, you can sprinkle the soup with chopped fennel and serve it with crusty bread.

 

Honeycomb Pasta Cake

Ingredients:

  • Onion
  • Grated cheese
  • Pasta rigatoni
  • Beef or chicken meat
  • A clove of garlic
  • Chili pepper, ground
  • Sliced ??tomato

Instructions:

Caramelize onions, by slowly frying them in a little oil until they are richly browned, add flour, minced garlic, pepper, and salt. After that, add chopped tomato and boil for a short while. 

At the same time, cook the rigatoni pasta. Drain and rinse with cold water.

Place the rigatoni vertically in a 24 cm springform pan that has been greased. Try to thoroughly saturate the spaghetti with the meat sauce by spreading it on top. Sprinkle cheese on top and bake it for 20 minutes in a 200° oven.

Let it cool for 15 to 20 minutes after removing it from the oven before serving.

Chicken Balls with Tomato Sauce and Cheese

Ingredients:

  • Ingredients
  • Basil
  • Salt
  • Mozzarella cheese
  • Red pepper, crushed
  • Dried oregano
  • Chicken or turkey fillet
  • A piece of bread
  • Egg
  • Mustard
  • A clove of garlic
  • Salt and pepper

For the sauce:

  • Tomato puree (fresh or canned)
  • Onion
  • A clove of garlic
  • Vinegar

Instructions:

Put the chicken or turkey fillet in a meat grinder with a piece of dry and drained bread, onion, and garlic. Add dried oregano, mustard, pepper, salt, and finely chopped basil leaves. Add egg and mix well. Make small balls and fry them in the oven or on a pan.

Prepare the sauce: 

Peel the tomatoes, chop them and cook them together with very finely chopped onions. Add chopped garlic, vinegar, salt, pepper, and oregano and mix them well.

The meatballs should be placed in a deep fireproof dish with the sauce, and the dish should be baked for 10 to 12 minutes at 180 degrees. After that, top it with cheese that has been finely sliced and put it back in the oven to melt the cheese.
